Low Fat Banana Bread

alt tag goes hereWe have two versions of Banana Bread featured on the 24 Sports site.  One is a carb free version and this one is low fat, both are equally delicious and make a lovely alternative to other healthy snacks/desserts/treats.

Ingredients:

  • 3 eggs (separated)
  • 4-5 tbsp honey
  • 4 tbsp olive oil
  • 3 ripe medium bananas (mashed)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 2 cups almond flour
  • 1 cup pecan or walnuts (optional - chopped)

Method:

  1. Preheat the oven to 350F/180C/gas mark 4.
  2. Cream the egg yolks and honey in a large bowl with a hand held electric mixer until light and fluffy this usually takes about 5 minutes.
  3. Add the olive oil, vanilla and mashed bananas to the bowl and mix well.
  4. In a another bowl sift together the almond flour, cinnamon and baking powder.  Then add to the egg mixture and stir well.
  5. In a clean bowl whisk the egg whites until they form firm peaks.
  6. Fold the egg whites into the cake mixture until combined.
  7. If you decide to add the nuts gently fold in now.
  8. Lightly grease two 1lb loaf tins and divide the cake mixture between both.
  9. Place in the middle of your oven and bake for 40 - 45 minutes until golden brown, test with toothpick if cooked it will come out clean. 
  10. Leave to cool in tin for 5 minutes and then remove to finish cooling.
