Low Fat Banana Bread
We have two versions of Banana Bread featured on the 24 Sports site. One is a carb free version and this one is low fat, both are equally delicious and make a lovely alternative to other healthy snacks/desserts/treats.
Ingredients:
- 3 eggs (separated)
- 4-5 tbsp honey
- 4 tbsp olive oil
- 3 ripe medium bananas (mashed)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 2 cups almond flour
- 1 cup pecan or walnuts (optional - chopped)
Method:
- Preheat the oven to 350F/180C/gas mark 4.
- Cream the egg yolks and honey in a large bowl with a hand held electric mixer until light and fluffy this usually takes about 5 minutes.
- Add the olive oil, vanilla and mashed bananas to the bowl and mix well.
- In a another bowl sift together the almond flour, cinnamon and baking powder. Then add to the egg mixture and stir well.
- In a clean bowl whisk the egg whites until they form firm peaks.
- Fold the egg whites into the cake mixture until combined.
- If you decide to add the nuts gently fold in now.
- Lightly grease two 1lb loaf tins and divide the cake mixture between both.
- Place in the middle of your oven and bake for 40 - 45 minutes until golden brown, test with toothpick if cooked it will come out clean.
- Leave to cool in tin for 5 minutes and then remove to finish cooling.
