Low Fat Fish Cakes

blueberriesDelicious, quick and easy homemade low fat fish cakes.  Ideal with a salad for lunch, a healthy starter for a dinner party or just enjoyed as a supper dish. 

These are fab served with a dash of hot chilli sauce and a large bowl of fresh salad!!!

Ingredients:

  • 1 fillet Sea Bass (or any white fish of your choice) 
  • 3 slices wholemeal bread (toasted)
  • 1 large egg
  • 1 tbsp low fat milk
  • 3 large stalks celery (chopped)
  • 1 medium onion (chopped)
  • 3 cloves garlic (crushed)
  • 1tsp olive oil 
  • handful of fresh parsly (chopped)
  • salt & freshly ground black pepper

Method:

  1. Finely chop celery and onion.
  2. Toast bread and dice.
  3. Saute onions, garlic, celery until onions are glassy.
  4. Add fish and partially cook.
  5. Remove from heat and mix with egg, milk, bread, chopped parsley and seasoning.
  6. Divide into 5 portions and pat into small pattie shape.
  7. Pan fry in low fat cooking spray or small amount of oil.
