Grilled Sardines with Lemon & Fennel

The aniseed flavour of the fennel, combined with the herbs and lemon works particularily well with fish and this recipe is delicious grilled, or pop onto the barbeque for a healthy alternative to burgers and sausages.


•    12 whole sardines, approx 900g or 2lb
•    1 small onion – finely diced
•    2 garlic gloves – finely diced
•    Zest and juice of 2 lemons
•    1 fennel bulb – finely diced
•    2 tsp fresh thyme leaves
•    6 tbsp olive oil
•    4 tomatoes – halved


1)    Rinse the sardines under cold water. Gut the fish if preferred but this is not essential. Place in a large non-metal bowl.
2)    In another bowl mix together the onion, garlic, lemon zest and juice, fennel, thyme and oil. Rub the mixture well into the fish. Cover and chill for at least 1 hour or overnight.
3)    Heat the grill or barbeque. Place the sardines on a baking tray or hinged barbeque rack along with the tomatoes.
4)    Cook for 20 minutes turning sardines half way, until browned.
